Easy Maple Mocha Christmas Cake

- 1 kg mixed dried fruit
- 2 ½ cups strong Gloria Jean’s Coffees Maple Whole Bean coffee
- ½ cup  slivered almonds
- 150g milk chocolate, roughly chopped
- 2 cups self raising flour
- Blanched almonds for garnishing



Soak the fruit in the coffee overnight.

Preheat oven to 180°C. Line the base and sides of 4 x 10cm square tin with three sheets of baking paper.

Combine the chocolate, slivered almonds and flour into the fruit mixture. Pour into prepared tins.

Smooth the top and garnish with the almonds.

Bake for 40 minutes or until a skewer inserted comes out clean.

Wait until completely cooled before gift-wrapping, and serve with your favourite Gloria Jean’s Coffees cappuccino, latte or espresso.
